Turkey and pomegranates 

Most people know that turkey is a great low-fat meat. Tonight we experimented with some leftover roasted turkey drumstick. We boiled the drumstick with a variety of 'whatever we had to hand' veggies including a pomegranate from Jen's art workshop!


Pomegranate seeds owe their superfood status to polyphenols, powerful antioxidants thought to offer heart health and anti-cancer benefits. ... In addition to antioxidants, pomegranates are a source of fibre, B vitamins, vitamin C, vitamin K and potassium. So what's not to love?


The pan contained the turkey and pomegranate along with apple, carrot, broccoli stalk, stock and bay leaves. Once well stewed, it was pureed. Then drained tinned tomatoes, garlic and spaghetti completed the mix.


It was DELICIOUS! I went back for seconds!! Whilst trying to eat healthily, we are also trying to waste nothing and this meal hit the nail on the head.
